We carefully handcraft this milk chocolate from bean to bar in Hassocks, West Sussex using deep, rich flavoured Nicalizo cocoa beans, the 8th cocoa to be designated heirloom cocoa by the HCP. A Trinitario variety mainly originating from the Northern Highlands of Nicaragua, analyzed by geneticists as a possible grandfather to the Criollo trees in Venezuela’s famed valleys of cacao. These red wine coloured cocoa pods are so named Nica for Nicaragua & Lizo/Liso in spanish, for their smooth texture & elongated shape.
