This plain milk chocolate derives it's complex yet light flavours from the Chuno cocoa variety whose pods are bright yellow & unusually, almost totally spherical. Beans for this chocolate were selected from a collection of 5 fermentation variants carried out in Nicaragua that yielded wildly different flavour profiles from the same Chuno genetic strain. This is the Clasico version, a 4-5 day fermentation with 1-2 turns which we carefully handcraft into our milk chocolate from bean to bar in Hassocks, West Sussex.
