Ana Cecilia Estevez, the producer of this coffee, is fanatical about growing and processing coffee. Her plot of land in Corquín Copan is not only home to coffee, it also has a diverse range of trees and ornamental plants for locals and tourists to enjoy.
After being picked, this coffee was naturally processed which included being macerated for 72 hour before being dried on raised beds for 20 - 30 days at 800 masl. This helped this coffee to develop a very creamy and velvety body with notes of raspberries and grapefruit, with cocoa nibs and cinnamon on the finish.
